Cowboy Shrimp Salad is a recipe we made on a whim one day after making our Cowboy Salsa and it’s definitely a keeper. This would be lovely to have at a brunch with friends.
A little back story of how we create posts. Usually we’re thinking the week before we get together to cook of ideas that have been floating around in our heads. We talk at the end of the week and between the two of us collaborating we come up with some pretty great recipes, some not so good ones and some off the wall ones. The off the wall ones can be where the magic happens!
While at the store we decided to pick up shrimp, we had no idea what we were going to create with them. Sometimes that’s the fun part of cooking! We had just finished making the Cowboy Salsa when we decided to try and make a salad out of it.
Here’s where the sautéed shrimp were added to create a beautiful salad. The warm shrimp combined with the coolness of the spinach and Cowboy Salsa is SO GOOD. We sat there thinking, “this is an amazing combination together” and were so glad we experimented with them.
The joy of cooking is creating things with items you have on hand. Don’t be afraid to experiment with flavors and textures. You may be surprised by the wonderful meals you can come up with.
The shrimp is sautéed in a small amount of butter, you can substitute ghee if you’re avoiding dairy. The trick to perfectly cooked shrimp is to NOT over cook them. This makes them tough and chewy.
How to make perfectly sautéed shrimp:
- Melt 1 tablespoon butter or ghee in a skillet over medium high heat.
- Add shrimp, salt and pepper. Cook on one side until pink, about 1 minute, then flip and cook another minute; immediately remove from pan.
The base of this Cowboy Shrimp Salad is spinach dressed with just a small amount of olive oil and salt. Just enough to barely coat the spinach leaves. Next pile on a heaping spoonful of Cowboy Salsa, remember this salsa is packed with nutrients from the beans, vegetables and good healthy fats from the avocado.

Cowboy Shrimp Salad
Ingredients
- 2 cups spinach chopped
- salt a pinch
- 1 teaspoon light olive oil
- 3/4 cup Cowboy Salsa find in appetizers
- 8-10 cooked shrimp peeled and deviened
- 1 tablespoon butter or ghee
- black rock salt optional as garnish
Instructions

Combine the spinach, olive oil and salt. Mix well; add to plate.

Add Cowboy Salsa in a heap to the middle of the salad.

Add sautéed shrimp to outer edges of the salad.

Top with black rock salt, optional.
