Ginger Mango Salad & Shrimp
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon ginger minced
- 1/3 cup scallions sliced
- 1 mango diced
- 1 tablespoon coconut aminos
- 1 tablespoon cilantro chopped
- 1 lb. raw shrimp
Instructions

Heat olive oil in skillet.

Add ginger; cook 2 to 3 minutes until the oil is infused with ginger.

Combine the infused olive oil with scallions, coconut aminos, cilantro and mango. Place into a bowl, set aside.

Soak wooden skewers in water or use metal skewers.

Add shrimp to skewers.

Brush shrimp with olive oil and grill both sides approximately 5 minutes or until opaque.

Plate mango salad on plate, then place grilled shrimp on top of mango salad.
