Our Pumpkin Chocolate Chip Energy Bites recipe goes back many years before we really got into healthy recipes. We would make these for our kids and they would down them within a few days. The addition of pumpkin pie spice has taken our original recipe and put it over the top! Welcome Fall!!!!
Pumpkin Chocolate Chip Energy Bites also make for the perfect bite for lunch boxes, pre/post workouts or just when you have a sweet tooth you need to fill. To be honest they taste a lot like cookie dough, but much better for you! Sometimes it’s one of those food we have to monitor or we could eat the whole batch by ourselves.
One thing we like about these Pumpkin Chocolate Chip Energy Bites is they are a recipe you can make and store in the freezer. That way when one of our teenagers is in a hurry to get out the door before school, they can just grab one (or two) and be off.
Just simply place all the ingredients into your mixer and run until all the ingredients are all incorporated. Then take your cookie scoop and make approximately 1″ bites. We like to place them on parchment paper, note these precut parchment paper liners are our favorite! Then place them in the fridge to get hard. Next just remove them and place them in an airtight container and store in your freezer.
Just so you don’t think every recipe we make is perfect, this was our second attempt at creating this recipe. We only share the recipes we think are amazing and our followers will love. Pumpkin Chocolate Chip Energy Bites
Ingredients
- 1 cup oats we used gluten free oats
- ⅔ cup toasted unsweetened coconut flakes
- ½ cup peanut butter
- ⅓ cup flaxseed ground
- ⅓ cup honey or maple syrup
- 1 tablespoon chia seeds
- 1/2 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- ½ cup chocolate chips
Instructions

Stir all ingredients in mixer until thoroughly mixed. Let it chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and we like to keep them in the freezer.
