Sliced Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • avocado oil
  • 2 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • cashews chopped
  • dried cherries chopped

Instructions

  1. Slice individual sweet potatoes carefully every 1/4 inch apart until the whole potato is sliced evenly across the potato. Make sure to stop before cutting through the bottom of the sweet potato.
  2. Place potatoes on a baking sheet, pour just enough avocado oil over each potato, making sure to pour in between cuts.
  3. Mix flours, onion powder, garlic powder, and salt. Then sprinkle over sweet potatoes.
  4. Bake at 375 for 1 hour.
  5. Remove from oven and top with chopped raw cashews and dried cherries.
