Warm Mustard Vinaigrette
Ingredients
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons dijon mustard
- 4 dates
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Mix above ingredients in a blender, then toss with roasted vegetables while still warm.

Serve immediately.
Recipe Notes
This is a great way to add a new flavor to roasted veggies. You can roast ANY vegetable of your choice. We roasted red potatoes and sliced brussel sprouts then topped with them with Mustard Vinaigrette.
