Roasted Fingerling Potatoes with Dill Dip

Ingredients

fingerling potatoes

tablespoons
olive oil
1
teaspoon
salt
1/2
teaspoon
pepper
Instructions
1. Preheat oven to 400.
2. Leave skins on and cut potatoes lengthwise.
3. Toss with oil, salt and pepper.
4. Place them on the a rimmed baking sheet.
5. Cook times will vary. We cook them until fork tender about 40 minutes.
6. Serve with Dill Dip.
Dill Dip Ingredients (combine):
1/2 cup whole mayo (recipe found under Dressings & Sauces)
2 tablespoons fresh dill, minced
Juice of one lemon
1/2 teaspoon garlic powder
s & p to taste
