Zucchini Sticks

One of our favorite ways to do veggies is to cover them with our favorite herbs and spices and bake them. This can make almost, if not all, vegetables taste great if it’s done right. One of our absolute favorites when using this technique is zucchini.

We know what some of you are thinking. “Zucchini?… Really?”

But we promise that if you “stick” around, we’ll tell you exactly why we love it so much!

Making sure to cook zucchini the right way is very important. If done a little off, you can end up with either too soft or too hard of a veggie to enjoy. This recipe is sure to give you crispy, tasty zucchini with minimal effort.

We love using common ingredients because they’re very easy to find and most of you probably already have all of them at home! Herbs like basil and fresh parsley give you that earthy home-garden flavor while simple spices like pepper and garlic powder create a denser flavor that everyone will love.

Zucchini is so good for you, and with all these flavorful spices and ingredients to accent it, your family and friends are going to love the fresh tastes we’ve managed to create with this recipe!

In this recipe, we’re using more of those nutritional yeast flakes that we’ve used many a time before to create an almost cheesy taste without actually adding any cheese. This ingredient is a healthy alternative to the taste of cheese and is going to make these Zucchini Sticks taste extra superb! We’ve also used avocado oil, another thing we love, because it has a high smoke point over other oils and is so much better for you.

Zucchini is high in Vitamin C and helps to support the health of your immune system. It can also lower your chances of cancer and heart disease. Zucchini helps improve your digestion and is super low in carbs and calories, meaning you can eat lots of it! We love how good it is for you, and the fact that it tastes great is just an extra great plus!

We love cooking with organic and healthy ingredients. They make us feels good and help our bodies stay working the way they should. It can be tricky to make them in a delicious and easy way, but once you get the hang of it, you’ll love how good you feel! They’re good looking, good tasting, and good for you. Zucchini Sticks

Ingredients

  • 3 zucchini sliced lengthwise and quartered
  • 1/2 teaspoon basil dried
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon thyme dried
  • 2 tablespoons fresh parsley diced
  • 1/4 cup avocado oil
  • 1/4 cup nutritional yeast flakes
  • salt and pepper to taste

Instructions

  1. Mix above ingredients in a bowl.
  2. Rub the ingredient mixture over the quartered pieces of zucchini.
  3. Bake at 400° for 22 minutes. Some oven temperatures vary, so look for a Zucchini Stick that isn't too mushy or undercooked.
  4. Broil on high for 5 the last minutes or until crispy.
  5. Serve with Dump Ranch (found under Dressings & Sauces).

  1. These are super tasty! Yummy! It was a little difficult getting the mixture on the zucchini. Next time I’m going to try coating the zucchini sticks in the 1/4 cup oil and giving the shake’n’bake method a try with the spices. I think I’ll check them for doneness around 22 minutes next time, as they are a bit mushy at 27 minutes and then the broiler. Thanks for a new way to eat zucchini!
